Ingredients
Scale
- 2 cups water
- 2 cups uncooked rice
- 1 (10 ounce) can of cream of chicken soup
- 1 (10 ounce) can of cream of mushroom soup
- 2 cups cooked chicken, shredded
- 1/4 cup butter
- 1 cup milk
- 1 small white onion, chopped
- 16 ounces broccoli florets (fresh or frozen)
- 2 cups Cheddar Cheese, shredded
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C).
- Cook the rice: Cook the rice according to package instructions. Typically, bring 2 cups of water to a boil, add rice, cover, and simmer until the rice is cooked (about 20 minutes).
- Assemble the casserole: In a 9×13-inch baking dish, combine the cooked rice and shredded chicken. Add the cream of chicken soup, cream of mushroom soup, butter, milk, chopped onion, and broccoli. Stir everything together, then add 1 cup of the shredded cheddar cheese.
- Bake: Bake the casserole in the preheated oven for 30 to 35 minutes, or until the mixture is bubbling and the broccoli is tender.
- Add more cheese: During the last 5 minutes of baking, sprinkle the remaining 1 cup of shredded cheddar cheese over the top of the casserole. Allow the cheese to melt and become golden.
- Rest and serve: Remove from the oven and let the casserole sit for 5 minutes before serving.
- Serve: Serve hot with a side of salad or warm breadsticks for a complete meal
Notes
- Use leftover chicken: This recipe is a great way to use up leftover chicken or rotisserie chicken, which saves time.
- Frozen broccoli: If you use frozen broccoli, make sure to thaw and drain it before adding it to the casserole.
- Cheese variation: You can experiment with different types of cheese, such as mozzarella, Monterey Jack, or a cheese blend, for a unique twist.
