Description

A rich, gooey chocolate chip cookie baked in a skillet with nutty brown butter flavor, studded with marshmallows and graham cracker pieces for that classic s’mores taste.


Ingredients

  • 1 cup unsalted butter
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 1 cup graham cracker pieces (roughly crushed)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium saucepan, melt butter over medium heat, swirling frequently until it turns golden brown and smells nutty (about 5 minutes). Remove from heat and let cool slightly.
  3. In a large bowl, whisk together brown butter, brown sugar, and granulated sugar until combined.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. In a separate bowl, whisk together flour, baking soda, and salt.
  6. Gradually add dry ingredients to wet mixture, stirring just until combined.
  7. Fold in chocolate chips and graham cracker pieces.
  8. Transfer dough to a 10-inch oven-safe skillet and spread evenly.
  9. Bake for 18–22 minutes until edges are golden and center is set but still soft.
  10. Sprinkle mini marshmallows over the top and bake an additional 2–3 minutes until marshmallows are toasted and melty.
  11. Remove from oven and let cool slightly before serving warm, scooping directly from the skillet.

Notes

  • Use a well-seasoned cast iron skillet or an oven-safe pan.
  • For extra gooeyness, serve with a scoop of vanilla ice cream.
  • Can substitute mini marshmallows with regular-sized by cutting them into smaller pieces.
  • Store leftovers covered at room temperature for up to 2 days.
