Description
A rich, gooey chocolate chip cookie baked in a skillet with nutty brown butter flavor, studded with marshmallows and graham cracker pieces for that classic s’mores taste.

- 1 cup unsalted butter
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups semi-sweet chocolate chips
- 1 cup mini marshmallows
- 1 cup graham cracker pieces (roughly crushed)
Instructions
- Preheat oven to 350°F (175°C).
- In a medium saucepan, melt butter over medium heat, swirling frequently until it turns golden brown and smells nutty (about 5 minutes). Remove from heat and let cool slightly.
- In a large bowl, whisk together brown butter, brown sugar, and granulated sugar until combined.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to wet mixture, stirring just until combined.
- Fold in chocolate chips and graham cracker pieces.
- Transfer dough to a 10-inch oven-safe skillet and spread evenly.
- Bake for 18–22 minutes until edges are golden and center is set but still soft.
- Sprinkle mini marshmallows over the top and bake an additional 2–3 minutes until marshmallows are toasted and melty.
- Remove from oven and let cool slightly before serving warm, scooping directly from the skillet.
Notes
- Use a well-seasoned cast iron skillet or an oven-safe pan.
- For extra gooeyness, serve with a scoop of vanilla ice cream.
- Can substitute mini marshmallows with regular-sized by cutting them into smaller pieces.
- Store leftovers covered at room temperature for up to 2 days.
