Description

Sweet and tender peach bars topped with a buttery brown sugar crumb, perfect for a summer dessert or snack with a hint of cinnamon warmth.


Ingredients

  • 2 cups all-purpose flour, divided
  • 1 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 4 cups fresh peaches, peeled and sliced
  • ½ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, mix 1½ cups flour, brown sugar, cinnamon, and salt. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
  3. Press half of the crumb mixture firmly into the bottom of the prepared pan to form the crust.
  4. In another bowl, toss sliced peaches with granulated sugar, lemon juice, cornstarch, and remaining ½ cup flour until well coated.
  5. Spread the peach mixture evenly over the crust.
  6. Sprinkle the remaining crumb mixture over the peaches.
  7. Bake for 45-50 minutes or until the top is golden brown and peaches are bubbly.
  8. Allow to cool completely before cutting into bars.

Notes

  • Use frozen peaches in a pinch, just thaw and drain excess liquid before using.
  • For extra flavor, add a teaspoon of vanilla extract to the peach filling.
  • Store bars in an airtight container for up to 3 days or freeze for longer storage.
