- 2 cups all-purpose flour, divided
- 1 cup brown sugar, packed
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 4 cups fresh peaches, peeled and sliced
- ½ cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, mix 1½ cups flour, brown sugar, cinnamon, and salt. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
- Press half of the crumb mixture firmly into the bottom of the prepared pan to form the crust.
- In another bowl, toss sliced peaches with granulated sugar, lemon juice, cornstarch, and remaining ½ cup flour until well coated.
- Spread the peach mixture evenly over the crust.
- Sprinkle the remaining crumb mixture over the peaches.
- Bake for 45-50 minutes or until the top is golden brown and peaches are bubbly.
- Allow to cool completely before cutting into bars.
Notes
- Use frozen peaches in a pinch, just thaw and drain excess liquid before using.
- For extra flavor, add a teaspoon of vanilla extract to the peach filling.
- Store bars in an airtight container for up to 3 days or freeze for longer storage.
