Description

Brown Sugar Rhubarb Cookies are a delightful mix of tart rhubarb and rich brown sugar, resulting in a chewy, flavorful treat. The tangy rhubarb balances out the sweetness of the brown sugar, making these cookies the perfect combination of flavors for spring or summer.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup rhubarb, finely chopped
  • 1/2 cup rolled oats
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon (if using). Set aside.
  3. In a large bowl, cream together the softened butter and brown sugar until light and fluffy. This should take about 3-4 minutes using an electric mixer.
  4. Add the egg and vanilla extract to the butter mixture and beat until fully combined.
  5. Gradually mix in the dry ingredients until just combined. Do not overmix.
  6. Fold in the chopped rhubarb and oats, mixing gently until evenly distributed.
  7. Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges of the cookies are golden brown and the centers are set.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra touch, drizzle with a simple glaze made of powdered sugar and milk after cooling.
  • Make sure to chop the rhubarb finely so it distributes evenly throughout the dough.
  • For a twist, you can substitute half the flour with whole wheat flour for added texture and flavor.
