- For the Brownie Layer:
- 1 box brownie mix (plus ingredients listed on box)
- For the Cheesecake Layer:
- 8 oz cream cheese, softened
- 1/3 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- For the Cookie Dough Layer:
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup mini chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
- Prepare brownie mix according to package instructions. Spread evenly in the bottom of the prepared pan. Bake for 15 minutes. Remove from oven and set aside (it will be underbaked).
- In a bowl, beat cream cheese and sugar until smooth. Add egg and vanilla and mix until creamy. Pour over the brownie layer and spread evenly.
- In another bowl, cream butter with brown and granulated sugar. Add egg and vanilla. Stir in flour, baking soda, salt, and chocolate chips to form a cookie dough.
- Drop spoonfuls of cookie dough over the cheesecake layer and gently spread or pat down with your fingers.
- Bake for 30–35 minutes or until cookie top is golden and center is just set. Cool completely, then chill for at least 2 hours before slicing.
Notes
- Chill overnight for the cleanest slices.
- Use homemade brownie batter if preferred instead of a boxed mix.
- Mini chocolate chips work best for even layering, but regular chips are fine too.
- Store covered in the fridge for up to 5 days or freeze for longer storage.
