  • 1 box brownie mix (plus ingredients listed on box)
  • For the Cheesecake Layer:
  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • For the Cookie Dough Layer:
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup mini chocolate chips


Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
  2. Prepare brownie mix according to package instructions. Spread evenly in the bottom of the prepared pan. Bake for 15 minutes. Remove from oven and set aside (it will be underbaked).
  3. In a bowl, beat cream cheese and sugar until smooth. Add egg and vanilla and mix until creamy. Pour over the brownie layer and spread evenly.
  4. In another bowl, cream butter with brown and granulated sugar. Add egg and vanilla. Stir in flour, baking soda, salt, and chocolate chips to form a cookie dough.
  5. Drop spoonfuls of cookie dough over the cheesecake layer and gently spread or pat down with your fingers.
  6. Bake for 30–35 minutes or until cookie top is golden and center is just set. Cool completely, then chill for at least 2 hours before slicing.

Notes

  • Chill overnight for the cleanest slices.
  • Use homemade brownie batter if preferred instead of a boxed mix.
  • Mini chocolate chips work best for even layering, but regular chips are fine too.
