Description

  •  These Brownie Stuffed Chocolate Chip Cookies are the ultimate indulgent dessert—crispy on the edges, chewy in the center, and hiding a rich, fudgy brownie surprise inside. It’s two classic treats in one cookie!

Ingredients

Scale
  • For the brownie filling (or use boxed mix):

    • 4 tablespoons unsalted butter

    • ½ cup semi-sweet chocolate chips

    • ½ cup granulated sugar

    • 1 large egg

    • 1 teaspoon vanilla extract

    • ¼ cup all-purpose flour

    • 1 tablespoon unsweetened cocoa powder

    • Pinch of salt

For the chocolate chip cookie dough:

    • 1 cup unsalted butter, softened

    • ¾ cup granulated sugar

    • ¾ cup brown sugar, packed

    • 2 large eggs

    • 2 teaspoons vanilla extract

    • 2 ½ cups all-purpose flour

    • 1 teaspoon baking soda

    • ½ teaspoon salt

    • 1 ½ cups chocolate chips

Instructions

  1. Make the brownie filling:

    1. Preheat oven to 350°F (175°C). Line a small baking sheet with parchment paper.

    2. Melt butter and chocolate chips together in a microwave-safe bowl. Stir until smooth.

    3. Whisk in sugar, egg, and vanilla. Stir in flour, cocoa powder, and salt.

    4. Spoon small scoops (about 1 tsp each) onto the prepared sheet. Freeze for 30–60 minutes, or until firm.

    Make the cookie dough:

    1. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.

    2. Beat in eggs one at a time, then stir in vanilla.

    3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet mixture. Stir in chocolate chips.

    4. Chill dough for 30 minutes for easier handling.

    Assemble and bake:

    1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment.

    2. Scoop about 2 tablespoons of cookie dough and flatten. Place one frozen brownie bite in the center, then cover with more cookie dough and seal edges.

    3. Place on baking sheet spaced 2 inches apart.

    4. Bake for 12–15 minutes, until edges are golden and centers are just set.

    5. Cool slightly before serving for gooey centers.
