Description

This delightful Bruschetta Chicken Pasta combines the fresh flavors of cherry tomatoes, basil, and garlic with tender chicken and al dente spaghetti. Drizzled with balsamic glaze and topped with Parmesan cheese, it’s a quick and flavorful dish perfect for weeknight dinners or special occasions.

  • 1 pint cherry tomatoes, sliced in half
  • 1/3 cup chopped basil
  • 4 garlic cloves, minced
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 oz spaghetti pasta
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 tablespoon Italian seasoning
  • 2 tablespoons olive oil, divided
  • 1/2 cup Parmesan cheese, grated or shredded
  • 1 tablespoon balsamic glaze (optional)

Instructions

  • Marinate the Bruschetta Mixture: In a small bowl, combine the sliced cherry tomatoes, chopped basil, minced garlic, balsamic vinegar, salt, and pepper. Place the bowl in the refrigerator to marinate while you prepare the rest of the dish.
  • Cook the Pasta: Bring a large pot of salted water to a boil. Cook the spaghetti according to package directions until al dente. Drain and set aside.
  • Cook the Chicken: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced chicken and season with Italian seasoning. Cook until the chicken is browned and cooked through, about 6-8 minutes. Remove from skillet and set aside.
  • SautΓ© the Bruschetta Mixture: In the same skillet, add the remaining 1 tablespoon of olive oil and the marinated bruschetta mixture. Cook for about 1 minute, or until heated through.
  • Combine Everything: In the skillet, combine the cooked pasta, chicken, and bruschetta mixture. Toss to coat everything evenly.
