- 1 box fudge brownie mix (19.5 ounce or family size)
- 1/4 cup butter, melted
- 4 ounces cream cheese, softened
- 1 large egg
- 1 cup powdered sugar
- 1 cup creamy peanut butter
- 1 teaspoon vanilla extract (optional)
- Optional: chopped peanuts or peanut butter chips for added texture
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the fudge brownie mix, melted butter, cream cheese, and egg. Mix until well combined.
- Form the mixture into balls about 1 inch in diameter and place them on the prepared baking sheet.
- Bake the brownie balls for 10-15 minutes or until they are set. Avoid overbaking.
- Let them cool on the baking sheet for a few minutes before transferring to a cooling rack.
- In a separate bowl, mix together the powdered sugar, peanut butter, and vanilla extract until smooth and creamy.
- Once the brownie balls are cool enough, flatten each one slightly and place a small amount of peanut butter filling in the center.
- Press a peanut butter ball lightly into the center of each cookie.
- For optional chocolate dipping, melt chocolate chips and spoon about ½ tablespoon on top of each cookie to cover the peanut butter ball. Let the chocolate set.
