Indulge in the delightful combination of fudgy brownie cookies filled with creamy peanut butter. These Buckeye Brownie Cookies are easy to make and are sure to be a hit with family and friends!

Ingredients

Scale
  • 1 box fudge brownie mix (19.5 ounce or family size)
  • 1/4 cup butter, melted
  • 4 ounces cream cheese, softened
  • 1 large egg
  • 1 cup powdered sugar
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract (optional)
  • Optional: chopped peanuts or peanut butter chips for added texture

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the fudge brownie mix, melted butter, cream cheese, and egg. Mix until well combined.
  • Form the mixture into balls about 1 inch in diameter and place them on the prepared baking sheet.
  • Bake the brownie balls for 10-15 minutes or until they are set. Avoid overbaking.
  • Let them cool on the baking sheet for a few minutes before transferring to a cooling rack.
  • In a separate bowl, mix together the powdered sugar, peanut butter, and vanilla extract until smooth and creamy.
  • Once the brownie balls are cool enough, flatten each one slightly and place a small amount of peanut butter filling in the center.
  • Press a peanut butter ball lightly into the center of each cookie.
  • For optional chocolate dipping, melt chocolate chips and spoon about ½ tablespoon on top of each cookie to cover the peanut butter ball. Let the chocolate set.

Notes

  • For added texture, consider folding in chopped peanuts or peanut butter chips into the brownie mix.
  • Ensure the brownie balls are not overbaked for a chewy texture.
