For the Buffalo Chicken Dip:

  • 2 cups cooked, shredded chicken (rotisserie chicken works great)

  • 8 oz cream cheese, softened

  • 1/2 cup ranch dressing (or blue cheese dressing for a stronger flavor)

  • 1/2 cup buffalo sauce (adjust to your spice preference)

  • 1 cup shredded cheddar cheese

  • 1/2 cup shredded mozzarella cheese

  • 1 tablespoon chopped green onions (optional)

For the Croissants:

  • 8 small croissants (store-bought or homemade)

  • 2 tablespoons butter, melted

  • Optional: extra buffalo sauce for drizzling


Instructions

  1. 1. Make the Buffalo Chicken Dip:

    • In a large mixing bowl, combine the shredded chicken, cream cheese, ranch or blue cheese dressing, buffalo sauce, and shredded cheddar and mozzarella cheeses.

    • Mix everything together until fully combined. You can use a hand mixer to make sure the cream cheese is smooth and well incorporated.

    • If you prefer your dip spicier, feel free to add more buffalo sauce to taste.

    • For added flavor, stir in chopped green onions.

    2. Prepare the Croissants:

    • Preheat the oven to 375°F (190°C).

    • Slice the croissants in half horizontally (like you would with a sandwich).

    • Brush the cut sides of the croissants with melted butter to add richness and help them crisp up in the oven.

    3. Assemble the Croissants:

    • Spoon a generous amount of buffalo chicken dip onto the bottom half of each croissant.

    • Place the top half of the croissant on top to form a sandwich. Repeat with all croissants.

    4. Bake the Croissants:

    • Arrange the assembled croissants on a baking sheet lined with parchment paper.

    • Bake for 10-12 minutes, or until the croissants are golden brown and the filling is warm and bubbly.

    5. Serve:

    • Remove from the oven and let cool slightly before serving.

    • For extra buffalo flavor, drizzle a little more buffalo sauce over the top of each sandwich.

    • Serve with extra ranch or blue cheese dressing for dipping and garnish with chopped green onions if desired.

Notes

  • You can make the buffalo chicken dip ahead of time and store it in the refrigerator for up to 2 days. When ready to assemble, just warm it up before spreading it on the croissants.

  • Feel free to swap the ranch dressing for blue cheese dressing for an extra tangy kick, or use Greek yogurt for a lighter version.
