Ingredients

Scale
  1. For the Buffalo Chicken:

    • 1 lb cooked chicken breast (shredded)

    • 1/4 cup buffalo sauce (store-bought or homemade)

    • 1 tablespoon ranch dressing (optional, for creaminess)

    • 1 tablespoon butter (for grilling the sandwich)

    For the Grilled Cheese:

    • 8 slices of bread (white, whole wheat, or sourdough)

    • 4 tablespoons butter (for spreading on bread)

    • 1 1/2 cups shredded sharp cheddar cheese (or a blend of cheddar and mozzarella)

    • 1/2 cup crumbled blue cheese (optional for added flavor)

    • 1/4 cup chopped green onions (optional, for garnish)

Instructions

  1. For the Buffalo Chicken:

    1. In a bowl, combine the shredded cooked chicken with buffalo sauce and ranch dressing (if using). Stir until the chicken is evenly coated. Set aside.

    For the Grilled Cheese:

    1. Heat a nonstick skillet or griddle over medium heat.

    2. While the skillet is heating up, spread butter on one side of each slice of bread.

    3. Place one slice of bread, butter-side-down, on the skillet and add a generous amount of shredded cheddar cheese (and blue cheese, if using) on top.

    4. Add a layer of the buffalo chicken mixture on top of the cheese.

    5. Place the second slice of bread, butter-side-up, on top of the sandwich.

    6. Grill the sandwich for about 3-4 minutes per side, or until the bread is golden brown and crispy, and the cheese has melted. Press down gently with a spatula to ensure the sandwich stays compact while grilling.

    7. Remove from the skillet, slice, and garnish with chopped green onions, if desired. Serve immediately.

Notes

  • For a milder version, reduce the amount of buffalo sauce or opt for a mild buffalo sauce.

  • You can use any type of bread you prefer, but thicker slices or sourdough work best for a crunchy, sturdy sandwich.

  • For extra flavor, add a layer of lettuce or tomato inside the sandwich, or even a drizzle of extra buffalo sauce on the bread before grilling.

  • The buffalo chicken mixture can be made in advance and stored in the refrigerator for up to 2 days.
