For the Buffalo Chicken:

  • 2 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1/2 cup buffalo sauce
  • 1/4 cup ranch dressing (or blue cheese dressing)

For the Lasagna:

  • 912 lasagna noodles, cooked and drained
  • 1 1/2 cups ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cups shredded rotisserie chicken with buffalo sauce
  • 1/4 cup fresh cilantro or parsley, chopped (optional)
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup heavy cream or milk

Instructions

  1. Prepare the Buffalo Chicken:
    • In a medium bowl, combine the shredded chicken with buffalo sauce and ranch dressing (or blue cheese dressing). Stir until the chicken is evenly coated. Set aside.
  2. Prepare the Lasagna Filling:
    • In a separate bowl, combine ricotta cheese, 1 cup of shredded mozzarella, Parmesan cheese, and the egg. Mix well to create a smooth cheese mixture.
  3. Assemble the Lasagna:
    • Preheat the oven to 375°F (190°C).
    • Spread a thin layer of the buffalo chicken mixture at the bottom of a 9×13-inch baking dish.
    • Layer 3-4 lasagna noodles over the chicken. Spread half of the ricotta mixture over the noodles, followed by half of the buffalo chicken mixture.
    • Repeat the layers: add another layer of noodles, the remaining ricotta mixture, and the remaining buffalo chicken mixture. Top the final layer with shredded cheddar cheese and the remaining mozzarella.
  4. Bake the Lasagna:
    • Cover the lasagna with aluminum foil and bake for 25 minutes.
    • After 25 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
  5. Serve and Enjoy:
    • Let the lasagna rest for 5-10 minutes before slicing. Garnish with fresh cilantro or parsley, if desired.
    • Serve with a side salad or garlic bread for a complete meal.

Notes

  • You can adjust the spice level by adding more or less buffalo sauce.
  • For extra flavor, drizzle additional ranch or blue cheese dressing on top when serving.
