Description

These Buffalo Chicken Quesadillas are a quick and delicious meal perfect for busy weeknights or game day! Packed with shredded chicken and melted cheese, they are easy to make and bursting with flavor.


Ingredients

  • 2 cups cooked shredded chicken
  • ½ cup buffalo sauce
  • 4 tablespoons butter
  • 4 10-inch flour tortillas
  • 2 cups shredded Mexican cheese

Optional for Serving:

  • Ranch dressing
  • Fresh chopped cilantro

Instructions

  • In a bowl, mix the shredded chicken with buffalo sauce.
  • Melt 2 tablespoons of butter in a large skillet over medium heat.
  • Place a tortilla in the skillet, sprinkle with ½ cup cheese, add half the buffalo chicken mixture, and top with another ½ cup cheese. Place another tortilla on top.
  • Cook for about 2 minutes or until golden brown underneath. Flip and cook for another 2 minutes until golden and cheese is melted.
  • Repeat with the remaining ingredients.

Notes

For added flavor, consider mixing different types of cheese or adding vegetables like bell peppers or onions.
