These Buffalo Chicken Quesadillas are a quick and delicious meal perfect for busy weeknights or game day! Packed with shredded chicken and melted cheese, they are easy to make and bursting with flavor.

- 2 cups cooked shredded chicken
- ½ cup buffalo sauce
- 4 tablespoons butter
- 4 10-inch flour tortillas
- 2 cups shredded Mexican cheese
Optional for Serving:
- Ranch dressing
- Fresh chopped cilantro
Instructions
- In a bowl, mix the shredded chicken with buffalo sauce.
- Melt 2 tablespoons of butter in a large skillet over medium heat.
- Place a tortilla in the skillet, sprinkle with ½ cup cheese, add half the buffalo chicken mixture, and top with another ½ cup cheese. Place another tortilla on top.
- Cook for about 2 minutes or until golden brown underneath. Flip and cook for another 2 minutes until golden and cheese is melted.
- Repeat with the remaining ingredients.
Notes
For added flavor, consider mixing different types of cheese or adding vegetables like bell peppers or onions.
