- 4 medium potatoes, peeled and grated
- 1 small onion, grated
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup buffalo wing sauce
- Vegetable oil, for frying
- For the Blue Cheese Dip:
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/4 cup crumbled blue cheese
- 1 tbsp lemon juice
- Salt and pepper, to taste
Instructions
- Place grated potatoes and onion in a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, combine potatoes, onion, eggs, flour, garlic powder, smoked paprika, salt, and pepper. Mix well.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat.
- Form mixture into small patties and fry until golden brown and crispy, about 3–4 minutes per side. Drain on paper towels.
- In a separate bowl, toss the hot latkes with buffalo wing sauce until well coated.
- For the dip, combine sour cream, mayonnaise, blue cheese, lemon juice, salt, and pepper in a bowl. Mix until smooth.
- Serve the buffalo-coated latkes warm with the blue cheese dip on the side.
