Description

Ingredients

  • 4 medium potatoes, peeled and grated
  • 1 small onion, grated
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup buffalo wing sauce
  • Vegetable oil, for frying
  • For the Blue Cheese Dip:
    • 1/2 cup sour cream
    • 1/4 cup mayonnaise
    • 1/4 cup crumbled blue cheese
    • 1 tbsp lemon juice
    • Salt and pepper, to taste

Instructions

  1. Place grated potatoes and onion in a clean kitchen towel and squeeze out excess moisture.
  2. In a large bowl, combine potatoes, onion, eggs, flour, garlic powder, smoked paprika, salt, and pepper. Mix well.
  3. Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat.
  4. Form mixture into small patties and fry until golden brown and crispy, about 3–4 minutes per side. Drain on paper towels.
  5. In a separate bowl, toss the hot latkes with buffalo wing sauce until well coated.
  6. For the dip, combine sour cream, mayonnaise, blue cheese, lemon juice, salt, and pepper in a bowl. Mix until smooth.
  7. Serve the buffalo-coated latkes warm with the blue cheese dip on the side.
