- 1 baguette, sliced into 1-inch rounds
- 2 tablespoons olive oil (for brushing)
- 1 pint cherry tomatoes, halved
- 8 oz burrata cheese, torn into pieces
- 1/4 cup fresh basil, torn
- 1 tablespoon balsamic glaze (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Arrange the baguette slices on a baking sheet and brush both sides with olive oil.
- Toast the baguette slices in the oven for 8-10 minutes, or until golden brown and crispy.
- While the bread is toasting, prepare the topping: In a bowl, combine the halved cherry tomatoes, torn basil leaves, salt, and pepper. Gently toss to combine.
- Once the crostini are toasted, remove them from the oven and let them cool slightly.
- Top each toasted baguette slice with a generous spoonful of the tomato and basil mixture.
- Add a piece of burrata cheese on top of each bruschetta, gently tearing it into smaller pieces.
- Drizzle with balsamic glaze, if using, and serve immediately.
Notes
- You can add a little olive oil and lemon juice to the tomatoes for extra flavor if desired.
- For a more traditional version, you can use mozzarella instead of burrata.
