- 1 can (13.5 oz) coconut milk
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/4 cup whole milk
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Grease an 8×8-inch square baking pan with butter or nonstick spray.
- Mix the dry ingredients: In a large bowl, whisk together the sweet rice flour, sugar, baking powder, and salt.
- Combine the wet ingredients: In a separate bowl, beat the eggs. Then add the coconut milk, melted butter, vanilla extract, and whole milk, and mix well until fully combined.
- Mix the wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir until the batter is smooth. The batter will be runny, which is normal.
- Pour into the pan: Pour the batter into the prepared baking pan and spread it out evenly.
- Bake the mochi: Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. The mochi should be slightly firm to the touch but still soft and chewy inside.
- Cool and serve: Allow the butter mochi to cool in the pan for about 10 minutes before cutting it into squares. Serve warm or at room temperature.

- You can make this ahead of time and store it in an airtight container for up to 3 days. It can also be frozen for longer storage.
