Description

This Butterfly Pea Chia Pudding Parfait is a vibrant and healthy dessert or breakfast option that combines the beauty of butterfly pea flower tea with the creamy goodness of chia pudding. The deep blue hue of the butterfly pea flower, known for its antioxidant properties, creates a stunning visual contrast with layers of creamy chia pudding and fresh fruit. This parfait is not only packed with nutrients but also a feast for the eyes!

Ingredients

Scale

For the Butterfly Pea Chia Pudding:

  • 1/4 cup chia seeds
  • 1 cup almond milk (or any plant-based milk of your choice)
  • 1 tablespoon butterfly pea flower powder (or brewed butterfly pea tea)
  • 1 tablespoon maple syrup (or sweetener of choice)
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

For the Vanilla Chia Pudding:

  • 1/4 cup chia seeds
  • 1 cup almond milk (or any plant-based milk of your choice)
  • 1 tablespoon maple syrup (or sweetener of choice)
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

For the Parfait Layers:

  • 1/2 cup fresh fruit (e.g., berries, mango slices, or kiwi)
  • Granola (optional, for topping)
  • Shredded coconut (optional, for garnish)

Instructions

  1. Prepare the Butterfly Pea Chia Pudding:
    • In a medium-sized bowl, whisk together the almond milk, butterfly pea powder, maple syrup, vanilla extract, and a pinch of salt. Make sure the butterfly pea powder is fully dissolved in the liquid.
    • Stir in the chia seeds until well combined. Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and form a thick pudding.
  2. Prepare the Vanilla Chia Pudding:
    • In a separate bowl, whisk together the almond milk, maple syrup, vanilla extract, and a pinch of salt.
    • Stir in the chia seeds and mix until evenly distributed. Cover and refrigerate for at least 4 hours or overnight.
  3. Assemble the Parfait:
    • Once both chia puddings have set, spoon a layer of the butterfly pea chia pudding into the bottom of serving glasses or jars.
    • Add a layer of fresh fruit on top of the butterfly pea chia pudding.
    • Next, add a layer of the vanilla chia pudding.
    • Repeat the layers, finishing with a layer of fruit and a sprinkle of granola and shredded coconut if desired.
  4. Serve:
    • Garnish the parfait with more fresh fruit, granola, and coconut. Serve chilled and enjoy this colorful, nutrient-packed treat!
