These Butternut Squash Lasagna Roll-Ups are a delicious twist on traditional lasagna, featuring creamy roasted butternut squash as a filling inside lasagna noodles. This dish is a perfect vegetarian alternative for fall, with rich flavors and a creamy texture!


Ingredients

  • 9 lasagna noodles (cooked according to package instructions)
  • 2 cups roasted butternut squash (pureed)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg (beaten)
  • 1 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1/2 tsp dried thyme
  • 1/4 tsp ground nutmeg
  • 1 cup spinach (fresh or frozen, thawed and drained)
  • 2 cups marinara sauce (homemade or store-bought)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions. Drain and set aside.
  3. In a large bowl, mix the roasted butternut squash puree, ricotta cheese, mozzarella, Parmesan, egg, garlic, thyme, nutmeg, spinach, salt, and pepper until well combined.
  4. Spread a thin layer of marinara sauce in the bottom of a baking dish.
  5. Lay each lasagna noodle flat and spoon a generous amount of the butternut squash mixture onto each noodle. Roll up the noodles tightly.
  6. Place each rolled-up noodle seam-side down in the baking dish.
  7. Pour the remaining marinara sauce over the top of the lasagna rolls.
  8. Cover the dish with aluminum foil and bake for 25-30 minutes.
  9. Remove the foil and bake for an additional 10 minutes until bubbly and slightly browned on top.
  10. Serve hot and enjoy!
