Description

These festive and colorful Butterscotch Confetti Squares are a family favorite, especially during the holiday season. The creamy peanut butter and butterscotch chips blend perfectly with colorful mini marshmallows, creating a sweet, chewy, and indulgent treat that everyone will love.

  • For an 8×8 pan:
    • ¼ cup butter
    • ½ cup peanut butter
    • 1 cup butterscotch chips
    • 250 g bag colored mini marshmallows
  • For a 9×13 pan (doubling the recipe):
    • ½ cup butter
    • 1 cup peanut butter
    • 2 cups butterscotch chips
    • 375 g bag colored mini marshmallows

Instructions

  • Melt the butter and peanut butter: In a medium saucepan, melt the butter and peanut butter over LOW heat, stirring frequently to prevent burning.
  • Add butterscotch chips: Once the butter and peanut butter have melted together, stir in the butterscotch chips. Continue stirring until the butterscotch chips are completely melted and the mixture is smooth.
  • Cool the mixture: Allow the mixture to cool for about 10 minutes. If the mixture is too hot, let it rest briefly, as it can cause the marshmallows to sink.
  • Add marshmallows: Once the mixture has cooled slightly, stir in the mini marshmallows until they are well coated.
  • Press into the pan: Line an 8×8-inch pan with parchment paper and evenly press the mixture into the pan. If doubling the recipe for a 9×13-inch pan, use the same method but adjust the marshmallow amount.
  • Refrigerate: Place the pan in the refrigerator to cool and set for 1-2 hours. Once set, remove from the pan and cut into squares.

Notes

  • Tip: Ensure the butterscotch mixture is not too hot when adding the marshmallows. If it’s too warm, the marshmallows will sink to the bottom.
  • Doubling the recipe: If doubling the recipe, use a 9×13-inch pan and reduce the marshmallows to 1.5 bags for the right consistency.
