Description

Butterscotch Pie is a timeless dessert that combines the rich, caramel-like flavor of butterscotch with the creamy texture of a custard filling. It’s perfect for any occasion and is sure to delight your guests.

Ingredients

Scale
  • 1 cup packed light brown sugar
  • 4 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 2 cups milk
  • 2 egg yolks, beaten
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1 (9 inch) pie crust, baked

Instructions

  • Prepare the Filling: In the top of a double boiler, combine the light brown sugar, cornstarch, salt, and milk. Cook over medium heat, stirring constantly, until the mixture begins to thicken, about 20 minutes.
  • Incorporate the Egg Yolks: Once thickened, whisk in the beaten egg yolks and continue to cook until custard-like.
  • Preheat the Oven: Preheat your oven to 400°F (200°C).
  • Finish the Filling: Remove from heat and stir in the butter and vanilla extract until fully incorporated.
  • Assemble and Bake: Pour the filling into the baked pie crust and bake for about 5 minutes, until the top begins to brown.

Notes

To elevate the flavor, add a dollop of freshly whipped cream on top and consider sprinkling with sea salt or shaved chocolate for added texture and contrast.
