Instructions
- Prepare the Dough: In a large mixing bowl, cream the softened butter and powdered sugar together until light and fluffy. Add the vanilla extract and mix until combined.
- Add Dry Ingredients: Gradually add the flour and salt, mixing on low speed until just combined. Fold in the finely chopped pecans.
- Chill the Dough: Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes to prevent spreading while baking.
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Shape and Bake: Scoop about 1 tablespoon of dough and roll it into a ball. Place each ball on the prepared baking sheet, spacing them about 1 inch apart. Bake for 12-15 minutes, or until the bottoms are lightly golden.
- Roll in Powdered Sugar: Let the cookies cool for 5 minutes, then roll each cookie in powdered sugar while still warm. Allow them to cool completely and roll in powdered sugar again for a second coat.
