  • 4 1/2 cups all-purpose flour (plus more if needed)
  • 2 tablespoons melted butter (plus extra for brushing)
  • 9 cups water
  • 1/2 cup baking soda
  • 1 large egg (whisked with 1 tablespoon water)

Instructions

  1. Prepare the Dough: In a large mixing bowl, whisk together warm milk, brown sugar, and salt. Sprinkle yeast on top and let it sit for 5 minutes until the yeast activates.
  2. Knead the Dough: Add the flour and melted butter. Mix until combined, then knead by hand for about 4 minutes until smooth, or use a stand mixer on medium speed for 4 minutes. Add more flour if the dough is too sticky.
  3. Let the Dough Rise: Transfer the dough to a lightly-oiled bowl, cover with a damp towel, and let it rise for 20-30 minutes in a warm spot until doubled in size.
  4. Preheat the Oven: Set the oven to 450°F and line two large baking sheets with parchment paper.
  5. Prepare the Boiling Solution: In a large stockpot, bring 9 cups of water and 1/2 cup baking soda to a boil over medium-high heat.
  6. Shape the Pretzel Bites: Turn the dough onto a lightly-oiled surface and divide it into 12 pieces. Roll each piece into 3/4-inch wide ropes, then cut into 1-inch long bites.
  7. Boil the Pretzel Bites: Use a spatula or wire strainer to gently place the bites in boiling water, about a dozen at a time, for 30 seconds each. Transfer to the parchment-lined baking sheets.
  8. Add Egg Wash and Salt: Brush the tops with egg wash and sprinkle with coarse sea salt.
