Ingredients

  • 1 lb smoked sausage, sliced into 1/2-inch rounds
  • 1 medium head of cabbage, chopped
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped

  • 2 tbsp olive oil
  • 4 cups chicken broth
  • 1/2 tsp smoked paprika
  • 1/2 tsp thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced sausage and cook for 4-5 minutes, or until browned on both sides. Remove the sausage and set it aside.
  2. In the same pot, add the chopped onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the diced potatoes, chopped cabbage, smoked paprika, thyme, salt, and pepper to the pot. Stir well to combine.
  4. Pour in the chicken broth, ensuring the vegetables and sausage are covered. Bring to a boil, then reduce the heat to low and cover the pot.
  5. Simmer for 20-25 minutes, or until the potatoes are tender and the cabbage has softened. Stir occasionally to ensure everything cooks evenly.
  6. Once the potatoes and cabbage are cooked, return the smoked sausage to the pot and stir to combine. Simmer for another 5 minutes to heat the sausage through.
  7. Serve hot, garnished with fresh parsley if desired.
