Ingredients
Scale
- 1 cup plain Greek yoghurt
- 1 cucumber (about 300g), deseeded and grated
- 1 bunch dill (about 50g), finely chopped
- 1 garlic clove, minced
- Salt & pepper, to taste
- 1 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- Pinch of sumac, for garnish
Instructions
- Prepare the Cucumber:
- Cut the cucumber in half and scoop out the seeds with a spoon. Discard the seeds.
- Coarsely grate the cucumber, then wrap it in a clean tea towel and squeeze out the excess water.
- Mix the Ingredients:
- Place the grated cucumber in a bowl. Add the Greek yoghurt, dill, minced garlic, salt, pepper, extra virgin olive oil, and lemon juice.
- Stir everything together until well combined.
- Serve:
- Transfer the mixture to a serving bowl. Drizzle with extra virgin olive oil and sprinkle with black pepper and a pinch of sumac.
Notes
- Cucumber Liquid: Save the liquid from the cucumber for a refreshing drink or to add to cocktails.
- Yoghurt Consistency: Greek yoghurt is preferred for its thicker texture, but regular yoghurt can be used with proper draining.
- Herb Substitutes: Fresh mint or parsley can be used instead of dill for a different flavor.
