Description

Cacik is a traditional Turkish appetizer and condiment made from creamy Greek yoghurt mixed with grated cucumber, fresh dill, and minced garlic. This refreshing and tangy dish is perfect as a dip, side dish, or a cool accompaniment to spicy meals.

Ingredients

Scale
  • 1 cup plain Greek yoghurt
  • 1 cucumber (about 300g), deseeded and grated
  • 1 bunch dill (about 50g), finely chopped
  • 1 garlic clove, minced
  • Salt & pepper, to taste
  • 1 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • Pinch of sumac, for garnish

Instructions

  • Prepare the Cucumber:
    • Cut the cucumber in half and scoop out the seeds with a spoon. Discard the seeds.
    • Coarsely grate the cucumber, then wrap it in a clean tea towel and squeeze out the excess water.
  • Mix the Ingredients:
    • Place the grated cucumber in a bowl. Add the Greek yoghurt, dill, minced garlic, salt, pepper, extra virgin olive oil, and lemon juice.
    • Stir everything together until well combined.
  • Serve:
    • Transfer the mixture to a serving bowl. Drizzle with extra virgin olive oil and sprinkle with black pepper and a pinch of sumac.

Notes

  • Cucumber Liquid: Save the liquid from the cucumber for a refreshing drink or to add to cocktails.
  • Yoghurt Consistency: Greek yoghurt is preferred for its thicker texture, but regular yoghurt can be used with proper draining.
  • Herb Substitutes: Fresh mint or parsley can be used instead of dill for a different flavor.
