Description

Cajun Cabbage Jambalaya is a hearty and flavorful dish that brings all the flavors of classic jambalaya, but with a twist! Instead of rice, tender cabbage is used to absorb the bold Cajun spices and mix with sausage, chicken, and vegetables. It’s a delicious low-carb take on a Southern favorite!


Ingredients

  • 1 medium head of cabbage, chopped
  • 2 tablespoons olive oil
  • 1 lb smoked sausage, sliced
  • 2 boneless, skinless chicken breasts, diced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1 1/2 cups chicken broth
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the sausage and chicken, and cook until browned, about 5–7 minutes. Remove from the pot and set aside.
  2. In the same pot, add the onion, bell pepper, and celery. Sauté until softened, about 5 minutes.
  3. Add the garlic and cook for 1 more minute until fragrant.
  4. Stir in the diced tomatoes, Cajun seasoning, paprika, thyme, and cayenne (if using). Cook for 2–3 minutes to let the spices bloom.
  5. Return the sausage and chicken to the pot. Add the chopped cabbage and chicken broth. Stir to combine.
  6. Cover and simmer for 20–25 minutes, stirring occasionally, until the cabbage is tender and the flavors have melded together. Season with salt and pepper to taste.
  7. Garnish with chopped parsley and serve warm. Enjoy your low-carb Cajun jambalaya!

Notes

  • Feel free to add shrimp to the jambalaya for an extra seafood twist!
  • If you want extra heat, toss in some hot sauce or extra cayenne pepper.
  • This dish can be made ahead of time and reheated for an even more flavorful meal the next day.
  • For a smokier flavor, use andouille sausage in place of smoked sausage.
