Description
Cajun Cabbage Jambalaya is a hearty and flavorful dish that brings all the flavors of classic jambalaya, but with a twist! Instead of rice, tender cabbage is used to absorb the bold Cajun spices and mix with sausage, chicken, and vegetables. It’s a delicious low-carb take on a Southern favorite!

- 1 medium head of cabbage, chopped
- 2 tablespoons olive oil
- 1 lb smoked sausage, sliced
- 2 boneless, skinless chicken breasts, diced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon Cajun seasoning
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 1 1/2 cups chicken broth
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the sausage and chicken, and cook until browned, about 5–7 minutes. Remove from the pot and set aside.
- In the same pot, add the onion, bell pepper, and celery. Sauté until softened, about 5 minutes.
- Add the garlic and cook for 1 more minute until fragrant.
- Stir in the diced tomatoes, Cajun seasoning, paprika, thyme, and cayenne (if using). Cook for 2–3 minutes to let the spices bloom.
- Return the sausage and chicken to the pot. Add the chopped cabbage and chicken broth. Stir to combine.
- Cover and simmer for 20–25 minutes, stirring occasionally, until the cabbage is tender and the flavors have melded together. Season with salt and pepper to taste.
- Garnish with chopped parsley and serve warm. Enjoy your low-carb Cajun jambalaya!
Notes
- Feel free to add shrimp to the jambalaya for an extra seafood twist!
- If you want extra heat, toss in some hot sauce or extra cayenne pepper.
- This dish can be made ahead of time and reheated for an even more flavorful meal the next day.
- For a smokier flavor, use andouille sausage in place of smoked sausage.
