Description

  • 1 lb large pasta shells
  • 2 tbsp butter
  • 2 cloves garlic, chopped
  • 2 cups cream (or milk, or a combination)
  • ½ cup Parmesan cheese (Parmigiano Reggiano), grated
  • ½ tbsp Cajun seasoning
  • 1 cup ricotta cheese
  • 1 cup cooked chicken, shredded or diced
  • 1 cup cooked broccoli, diced
  • 2 green onions, thinly sliced
  • ½ cup Parmesan cheese (Parmigiano Reggiano), grated
  • 1 tsp lemon zest
  • ½ tbsp Cajun seasoning
  • 1 cup mozzarella cheese, shredded

Instructions

  • Prepare Pasta Shells: Cook the pasta shells according to package directions. Set aside to cool individually to prevent sticking.
  • Make Cajun Alfredo Sauce: In a saucepan over medium heat, melt the butter and add the garlic. Sauté until fragrant (about 1 minute). Add the cream, ½ cup Parmesan, and ½ tbsp Cajun seasoning, then bring to a boil. Reduce heat and simmer for 5 minutes.
  • Prepare Filling: In a bowl, mix together ricotta, chicken, broccoli, green onions, ½ cup Parmesan, lemon zest, and ½ tbsp Cajun seasoning.
  • Assemble Stuffed Shells: Pour the Cajun Alfredo sauce into the bottom of a large baking dish. Stuff each shell with the chicken mixture and arrange them in the dish. Sprinkle mozzarella cheese over the top.
  • Bake: Bake in a preheated 350°F (180°C) oven for 20 minutes, or until the cheese is melted and the sauce is bubbling around the edges.
