- 1/2 cup diced tomatoes (canned or fresh)

Instructions
- Cook gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions. Drain and set aside.
- Season and cook chicken: In a large skillet, heat olive oil over medium heat. Season diced chicken with Cajun seasoning, salt, and pepper. Add chicken to the skillet and cook until browned and cooked through (about 5-7 minutes).
- Make sauce: Reduce heat to low. Add heavy cream and chicken broth to the skillet, stirring to combine. Bring to a simmer.
- Add spinach and tomatoes: Stir in spinach and diced tomatoes. Cook for about 2-3 minutes, until spinach is wilted.
- Combine with gnocchi: Add cooked gnocchi to the skillet, tossing to coat in the sauce. Stir in grated Parmesan cheese until melted and creamy.
- Serve: Plate Cajun chicken gnocchi and garnish with fresh parsley if desired.
