Ingredients

  • 1 lb chicken breast, diced
  • 1 tablespoon Cajun seasoning (or to taste)
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 lb gnocchi (store-bought or homemade)
  • 1 cup spinach (fresh or frozen)
  • 1/2 cup diced tomatoes (canned or fresh)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Cook gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions. Drain and set aside.
  • Season and cook chicken: In a large skillet, heat olive oil over medium heat. Season diced chicken with Cajun seasoning, salt, and pepper. Add chicken to the skillet and cook until browned and cooked through (about 5-7 minutes).
  • Make sauce: Reduce heat to low. Add heavy cream and chicken broth to the skillet, stirring to combine. Bring to a simmer.
  • Add spinach and tomatoes: Stir in spinach and diced tomatoes. Cook for about 2-3 minutes, until spinach is wilted.
  • Combine with gnocchi: Add cooked gnocchi to the skillet, tossing to coat in the sauce. Stir in grated Parmesan cheese until melted and creamy.
  • Serve: Plate Cajun chicken gnocchi and garnish with fresh parsley if desired.
