Ingredients

  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (8 oz) tomato sauce
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 hamburger buns
  • 1 tablespoon olive oil
  • Optional toppings: sliced pickles, shredded cheese, coleslaw

Instructions

  • Cook the Vegetables: Heat olive oil in a large skillet over medium heat. Add diced bell pepper and onion, cooking until softened, about 3-4 minutes.
  • Add Garlic: Add minced garlic and cook for another minute until fragrant.
  • Cook the Chicken: Add the ground chicken to the skillet. Break it up with a spoon and cook until it is no longer pink, about 5-7 minutes.
  • Add Sauce and Seasoning: Stir in the tomato sauce, ketchup, Worcestershire sauce, Cajun seasoning, smoked paprika, salt, and pepper. Simmer for 10 minutes to allow the flavors to meld.
  • Toast the Buns: While the chicken mixture simmers, toast the hamburger buns in a separate skillet or toaster until golden brown.
  • Assemble the Sandwiches: Spoon the Cajun chicken mixture onto the bottom halves of the buns. Add optional toppings like sliced pickles, shredded cheese, or coleslaw, then place the top halves of the buns on top.
