Ingredients

Scale
  • For the Stuffed Mushrooms:
  • 12 large white mushrooms, stems removed
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • For the Cheese Pull:
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon butter

Instructions

  1. Prepare the shrimp: In a bowl, toss the shrimp with olive oil, Cajun seasoning, garlic powder, paprika, salt, and pepper. Heat a skillet over medium heat and cook the shrimp for 2-3 minutes per side, until pink and cooked through. Remove from heat and chop the shrimp into small pieces.
  2. Prepare the mushrooms: Preheat the oven to 375°F (190°C). Arrange the mushroom caps on a baking sheet lined with parchment paper or foil. Set aside.
  3. Make the filling: In a bowl, combine the chopped shrimp, cream cheese, Parmesan cheese, and mozzarella cheese. Mix well until smooth and creamy.
  4. Stuff the mushrooms: Spoon the shrimp mixture into each mushroom cap, pressing gently to pack the filling in.
  5. Bake the mushrooms: Place the stuffed mushrooms in the preheated oven and bake for 15-20 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.
  6. Prepare the cheese pull: In a small bowl, combine the shredded mozzarella and cheddar cheese. Place a small amount of the cheese mixture on top of each stuffed mushroom before baking for the last 5 minutes, allowing the cheese to melt and create a gooey cheese pull.
  7. Serve: Once baked, remove from the oven and sprinkle with fresh parsley for garnish. Serve immediately and enjoy the cheesy, Cajun-flavored goodness!

Notes

  • If you want to make this dish ahead of time, prepare the stuffed mushrooms and refrigerate them for up to 24 hours before baking. Add the cheese topping just before baking.
  • For extra flavor, try adding a dash of hot sauce to the shrimp filling.
  • You can also experiment with different types of cheese, such as pepper jack, for an extra spicy kick.
