Description

Ingredients

  • 10 ounces heirloom cherry tomatoes
  • 2 tablespoons chopped Calabrian chilis
  • 2 tablespoons oil from the Calabrian chili jar
  • 2 tablespoons red wine vinegar
  • 1 tablespoon capers
  • 1/4 cup finely chopped parsley
  • 1 large garlic clove, minced
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon pepper
  • 16 ounces mini burrata balls
  • 1 loaf rustic ciabatta
  • 1/4 cup olive oil
  • 12 large garlic cloves (whole)

Instructions

  • Make the Tomato Mixture: In a large bowl, combine tomatoes, Calabrian chilis, Calabrian chili oil, red wine vinegar, capers, parsley, garlic, salt, and pepper. Stir to combine and let marinate for at least 15 minutes, or up to one day.
  • Prepare the Bread: Preheat oven to 350°F (175°C). Cut bread into 1/2-inch to 1-inch slices and cut each slice in half vertically. Place on a large rimmed baking sheet. Drizzle with olive oil and sprinkle generously with kosher salt and pepper. Bake until crisp and slightly golden brown, about 12-15 minutes. Rub a whole garlic clove on the hot bread to infuse with garlic.
  • Assemble the Appetizer: Arrange burrata in a large shallow serving dish or bowl. Pour the tomato and chili mixture on top. Serve with prepared bread.

Notes

This appetizer can be prepared ahead of time; just store the marinated tomatoes in the fridge and assemble before serving.
