Ingredients
Scale
- 1 lb chicken breast, thinly sliced
- 1 lb shrimp, peeled and deveined
- 2 cups cooked white rice
- 1 large onion, thinly sliced
- 1 zucchini, sliced into thin rounds
- 2 carrots, thinly sliced
- 2 eggs
- Soy sauce, to taste
- Salt and pepper, to taste
- Vegetable oil
- Sesame seeds (optional, for garnish)
- Green onions, chopped (for garnish)
Instructions
- Preheat your Blackstone griddle over medium-high heat and lightly oil the surface.
- Place chicken and shrimp on the griddle. Season with salt, pepper, and a splash of soy sauce. Cook until the chicken is golden and shrimp is pink, about 5-7 minutes. Remove and set aside.
- Add a bit more oil to the griddle. Sauté onions, zucchini, and carrots until tender but still crisp, about 3-4 minutes. Push veggies to the side of the griddle.
- Add the cooked rice. Make a well in the center and crack two eggs into it. Scramble the eggs and then mix with the rice.
- Return the cooked chicken and shrimp to the griddle. Toss everything together. Season with soy sauce to taste.
- Garnish with sesame seeds and chopped green onions. Serve hot.
Notes
- Feel free to customize the vegetables based on preference.
- For an authentic touch, use sesame oil instead of vegetable oil.
