  • 1 lb chicken breast, thinly sliced
  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked white rice
  • 1 large onion, thinly sliced
  • 1 zucchini, sliced into thin rounds
  • 2 carrots, thinly sliced
  • 2 eggs
  • Soy sauce, to taste
  • Salt and pepper, to taste
  • Vegetable oil
  • Sesame seeds (optional, for garnish)
  • Green onions, chopped (for garnish)

Instructions

  • Preheat your Blackstone griddle over medium-high heat and lightly oil the surface.
  • Place chicken and shrimp on the griddle. Season with salt, pepper, and a splash of soy sauce. Cook until the chicken is golden and shrimp is pink, about 5-7 minutes. Remove and set aside.
  • Add a bit more oil to the griddle. Sauté onions, zucchini, and carrots until tender but still crisp, about 3-4 minutes. Push veggies to the side of the griddle.
  • Add the cooked rice. Make a well in the center and crack two eggs into it. Scramble the eggs and then mix with the rice.
  • Return the cooked chicken and shrimp to the griddle. Toss everything together. Season with soy sauce to taste.
  • Garnish with sesame seeds and chopped green onions. Serve hot.
