Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a baking dish with butter or cooking spray.
- Prep the Sauce: In a small saucepan, melt the butter over medium heat. Stir in the brown sugar, granulated sugar, maple syrup (or honey), cinnamon, nutmeg, and salt. Simmer gently for 2-3 minutes until the sauce thickens slightly. Remove from heat and stir in the vanilla extract.
- Layer the Sweet Potatoes: Place the sweet potato rounds in the prepared baking dish, spreading them evenly.
- Pour the Sauce: Pour the warm sauce over the sweet potatoes, coating them evenly. If desired, sprinkle chopped pecans or walnuts on top.
- Bake: Cover the dish with foil and bake for 30 minutes. Remove the foil, stir the potatoes, and continue baking for another 20-25 minutes until tender and bubbly.
