- 3 (15 oz) cans artichoke hearts in water, drained and halved
- Juice of 1 lemon
- 2 tablespoons butter (or olive oil)
- 5 garlic cloves, minced
- 6 anchovy fillets (optional)
- ⅔ cup Italian-style bread crumbs
- ¼ cup flat-leaf parsley, chopped
- ½ cup Parmesan cheese, freshly shredded
- Freshly grated black pepper, to taste
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C).
- Prepare the artichoke hearts: Drain the artichoke hearts well, squeezing out any excess water. Arrange the artichoke halves, cut side up, in a baking dish.
- Add lemon juice: Squeeze the juice of 1 lemon over the arranged artichoke hearts.
- Prepare the breadcrumb topping: In a medium skillet, melt the butter over medium-high heat. Add the minced garlic and anchovy fillets (if using). Break up the anchovy fillets with a spoon, cooking until they dissolve in the butter, about 2-3 minutes.
- Toast the breadcrumbs: Add the breadcrumbs to the skillet and mix well with the garlic and anchovy mixture. Stir continuously until the breadcrumbs turn golden brown, about 3-4 minutes.
- Add parsley and Parmesan: Remove the skillet from heat and stir in the chopped parsley, shredded Parmesan cheese, and freshly grated black pepper.
- Assemble and bake: Spoon the breadcrumb mixture evenly over the artichoke hearts in the baking dish. Bake at 400°F for 15-20 minutes, or until the topping is crispy and the artichokes are heated through.
- Serve: Serve warm as a side dish or appetizer.
