Description
Flaky puff pastry bundles filled with juicy tomatoes, fresh basil, and melted mozzarella cheese — a Caprese-inspired twist perfect for appetizers or brunch.

- 1 sheet puff pastry, thawed
- 8 oz fresh mozzarella, cut into slices or cubes
- 1 cup cherry tomatoes, halved
- Fresh basil leaves
- 1 egg (for egg wash)
- 1 tbsp balsamic glaze (optional, for drizzling)
- Salt and pepper, to taste
- Flour (for dusting)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out puff pastry and cut into 6 equal squares.
- In the center of each square, place a slice of mozzarella, a few cherry tomato halves, and 1–2 fresh basil leaves. Season lightly with salt and pepper.
- Fold the corners of the puff pastry up over the filling and pinch together at the top to seal, forming a bundle. Optionally, brush the edges with water to help them stick.
- Whisk the egg and brush it over each bundle for a golden finish.
- Place the bundles on the prepared baking sheet and bake for 18–22 minutes, or until puffed and golden brown.
- Remove from oven and let cool slightly. Drizzle with balsamic glaze if desired and serve warm.
Notes
- Can be made ahead and stored in the fridge before baking for up to 1 day.
- For extra flavor, add a spoonful of pesto inside each bundle.
- Use mini mozzarella balls (bocconcini) for easy assembly.
