Description

Flaky puff pastry bundles filled with juicy tomatoes, fresh basil, and melted mozzarella cheese — a Caprese-inspired twist perfect for appetizers or brunch.


Ingredients

  • 1 sheet puff pastry, thawed
  • 8 oz fresh mozzarella, cut into slices or cubes
  • 1 cup cherry tomatoes, halved
  • Fresh basil leaves
  • 1 egg (for egg wash)
  • 1 tbsp balsamic glaze (optional, for drizzling)
  • Salt and pepper, to taste
  • Flour (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out puff pastry and cut into 6 equal squares.
  3. In the center of each square, place a slice of mozzarella, a few cherry tomato halves, and 1–2 fresh basil leaves. Season lightly with salt and pepper.
  4. Fold the corners of the puff pastry up over the filling and pinch together at the top to seal, forming a bundle. Optionally, brush the edges with water to help them stick.
  5. Whisk the egg and brush it over each bundle for a golden finish.
  6. Place the bundles on the prepared baking sheet and bake for 18–22 minutes, or until puffed and golden brown.
  7. Remove from oven and let cool slightly. Drizzle with balsamic glaze if desired and serve warm.

Notes

  • Can be made ahead and stored in the fridge before baking for up to 1 day.
  • For extra flavor, add a spoonful of pesto inside each bundle.
  • Use mini mozzarella balls (bocconcini) for easy assembly.
