Description

A hearty and flavorful one-pan meal combining turkey meatballs, penne pasta, fresh cherry tomatoes, and mozzarella, all drizzled with balsamic glaze. Perfect for family dinners or gatherings!

  • 1 tablespoon olive oil
  • 2 cloves garlic, thinly sliced
  • 2 pints cherry tomatoes, halved
  • 1 (22 oz.) bag Rosina Turkey Meatballs
  • 2 tablespoons chopped fresh basil, plus more for garnish
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup mozzarella pearls, drained
  • 1/2 teaspoon crushed red pepper flakes
  • Balsamic glaze, for garnish

Instructions

  • Cook the Pasta: Fill a large pot with salted water and bring it to a boil. Cook the penne pasta according to package directions. Drain and set aside.
  • Prepare the Skillet: In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and cook until fragrant, about 30 seconds.
  • Add Tomatoes and Meatballs: Add the halved cherry tomatoes and cook, stirring occasionally, until they begin to break down. Reduce heat to medium-low and stir in the turkey meatballs. Season with salt and pepper. Cover and cook, stirring occasionally, until a thick sauce forms and the meatballs are fully cooked, about 30 to 35 minutes.
  • Combine Pasta and Basil: Stir in the chopped basil and cooked pasta, tossing to coat everything evenly.
  • Add Cheese: Top with the mozzarella pearls. Cover and cook until the cheese just begins to melt, about 1 to 2 minutes.
  • Garnish and Serve: Sprinkle with crushed red pepper flakes and additional basil. Drizzle with balsamic glaze before serving.

  • For extra flavor, you can add a splash of white wine to the skillet after adding the tomatoes.
