For the Apples:
- 3/4 cup lightly packed brown sugar
- 1/4 cup butter
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon ground cinnamon
- Pinch of kosher salt
- 2 apples, peeled, cored, and sliced 1/2″ thick
For the Cake:
- Cooking spray (for greasing)
- 1 3/4 cups all-purpose flour
- 3/4 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon kosher salt
- 1/4 teaspoon ground nutmeg
- 1/2 cup (1 stick) butter, softened
- 1 cup sugar
- 1/2 cup lightly packed brown sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 3/4 cup milk
Instructions
- Prepare the Caramel Apple Layer:
- Preheat your oven to 350°F and grease a 9” round cake pan with cooking spray.
- In a small saucepan over medium heat, melt the brown sugar, butter, vanilla, cinnamon, and salt. Stir and cook until the mixture thickens slightly, about 2 minutes.
- Pour the caramel sauce into the prepared cake pan, then arrange the apple slices in a single layer on top of the caramel. Set aside.
- Make the Cake Batter:
- In a large bowl, whisk together the flour, baking powder, cinnamon, salt, and nutmeg.
- In another large bowl, use a hand mixer to beat together the softened butter and both sugars until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
- Add half of the dry ingredients to the wet ingredients and beat until just combined.
- Pour in the milk and mix until fully incorporated. Add the remaining dry ingredients and stir until just combined. Do not overmix.
- Assemble and Bake the Cake:
- Pour the cake batter over the apples and caramel in the cake pan, spreading it evenly.
- Bake for about 1 hour, or until a toothpick inserted into the center of the cake comes out clean.
- Let the cake cool in the pan for 15 minutes, then carefully invert it onto a cooling rack to cool completely before slicing.
Notes
- Serve with whipped cream or a scoop of vanilla ice cream for an extra indulgent treat.
- Drizzle additional caramel sauce on top if desired.
