Description

For the Apples:

  • 3/4 cup lightly packed brown sugar
  • 1/4 cup butter
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of kosher salt
  • 2 apples, peeled, cored, and sliced 1/2″ thick

For the Cake:

  • Cooking spray (for greasing)
  • 1 3/4 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup (1 stick) butter, softened
  • 1 cup sugar
  • 1/2 cup lightly packed brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 3/4 cup milk

Instructions

  • Prepare the Caramel Apple Layer:
    • Preheat your oven to 350°F and grease a 9” round cake pan with cooking spray.
    • In a small saucepan over medium heat, melt the brown sugar, butter, vanilla, cinnamon, and salt. Stir and cook until the mixture thickens slightly, about 2 minutes.
    • Pour the caramel sauce into the prepared cake pan, then arrange the apple slices in a single layer on top of the caramel. Set aside.
  • Make the Cake Batter:
    • In a large bowl, whisk together the flour, baking powder, cinnamon, salt, and nutmeg.
    • In another large bowl, use a hand mixer to beat together the softened butter and both sugars until light and fluffy.
    • Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
    • Add half of the dry ingredients to the wet ingredients and beat until just combined.
    • Pour in the milk and mix until fully incorporated. Add the remaining dry ingredients and stir until just combined. Do not overmix.
  • Assemble and Bake the Cake:
    • Pour the cake batter over the apples and caramel in the cake pan, spreading it evenly.
    • Bake for about 1 hour, or until a toothpick inserted into the center of the cake comes out clean.
    • Let the cake cool in the pan for 15 minutes, then carefully invert it onto a cooling rack to cool completely before slicing.

Notes

  • Serve with whipped cream or a scoop of vanilla ice cream for an extra indulgent treat.
  • Drizzle additional caramel sauce on top if desired.
