This Caramel Brownie Pie combines a classic pie crust with a rich, fudgy brownie filling layered with gooey caramel, making it an indulgent dessert perfect for any sweet tooth.


Ingredients

  • 1 pre-made pie shell or pie dough
  • 11 ounces caramel bits or candies (e.g., Kraft baking caramels)
  • 1/4 cup heavy cream
  • 3/4 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 eggs
  • 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. If using pie dough, roll it out and place it in your pie pan.
  3. In a microwave-safe bowl, combine caramel bits and heavy cream. Microwave for 60 seconds, then stir. Continue heating in 30-second increments, stirring between, until fully melted. Refrigerate for 5 minutes to cool.
  4. In a large bowl, mix melted butter, granulated sugar, and brown sugar with a hand or stand mixer for 1 minute.
  5. Add eggs, cocoa powder, vanilla extract, and salt. Mix well and scrape down the bowl.
  6. Add flour and mix until combined. Scrape down the bowl again.
  7. Spread half of the brownie batter over the pie crust.
  8. Reserve a few tablespoons of caramel for topping. Pour the remaining caramel evenly over the brownie batter.
  9. Spoon the remaining brownie batter over the caramel layer as evenly as possible.
  10. Use a spatula or back of a spoon to gently spread and cover the caramel. It’s fine if layers mix slightly.
  11. Bake for 50–60 minutes, or until a toothpick inserted comes out clean.
  12. Cool completely, then drizzle reserved caramel on top and sprinkle with salt if desired.
