For the Cake:
- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
For the Caramel Frosting:
- 1 cup unsalted butter
- 1 cup packed brown sugar
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- 3 cups powdered sugar
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the flour mixture in three parts, alternating with the buttermilk, beginning and ending with the flour mixture. Mix until just combined.
- Pour the batter evenly into the prepared cake pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- While the cakes are cooling, make the caramel frosting: In a saucepan, melt the butter over medium heat. Add the brown sugar and bring to a boil, stirring constantly.
- Once the mixture is boiling, stir in the heavy cream and vanilla extract. Let the mixture simmer for 5 minutes, stirring occasionally, until it thickens slightly.
- Remove from heat and let it cool for about 10 minutes. Gradually add the powdered sugar and a pinch of salt, mixing until smooth and creamy.
- Once the cakes have cooled, spread a layer of caramel frosting between the two layers, then frost the top and sides of the cake with the remaining frosting.
- Allow the cake to set for about 30 minutes before slicing and serving. Enjoy!

- If you prefer a smoother texture, you can sift the powdered sugar before adding it to the frosting.
