  • 4 medium sweet potatoes or yams, peeled and sliced into 1/2-inch rounds
  • 1/2 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans

Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick cooking spray.
  • Arrange the sliced sweet potatoes in a single layer in the prepared baking dish.
  • In a medium saucepan, combine melted butter, brown sugar, granulated sugar, water, vanilla extract, cinnamon, nutmeg, and salt. Cook over medium heat, stirring constantly, until the mixture comes to a boil and the sugars are dissolved, about 5 minutes.
  • Pour the caramel sauce evenly over the sweet potatoes in the baking dish, making sure to coat each slice.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
