Instructions

  1. Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Place the oyster crackers in a large mixing bowl and set aside.
  3. In a medium saucepan, melt the butter over medium heat. Add brown sugar and corn syrup. Stir continuously until the mixture begins to boil.
  4. Boil for 2 minutes without stirring, then remove from heat. Stir in baking soda and vanilla extract (mixture will foam up).
  5. Quickly pour the caramel mixture over the crackers and toss gently until evenly coated.
  6. Spread the coated crackers in a single layer on the prepared baking sheet.
  7. Bake for 45 minutes, stirring every 15 minutes to ensure even coating and baking.
  8. Let cool completely on the baking sheet. Once cooled, break apart any clumps and store in an airtight container.
