Instructions
- Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper or lightly grease it.
- Place the oyster crackers in a large mixing bowl and set aside.
- In a medium saucepan, melt the butter over medium heat. Add brown sugar and corn syrup. Stir continuously until the mixture begins to boil.
- Boil for 2 minutes without stirring, then remove from heat. Stir in baking soda and vanilla extract (mixture will foam up).
- Quickly pour the caramel mixture over the crackers and toss gently until evenly coated.
- Spread the coated crackers in a single layer on the prepared baking sheet.
- Bake for 45 minutes, stirring every 15 minutes to ensure even coating and baking.
- Let cool completely on the baking sheet. Once cooled, break apart any clumps and store in an airtight container.
