  • 1 cup brown sugar, packed
  • 45 ripe peaches, peeled and sliced
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a small saucepan over medium heat, melt the butter and brown sugar together. Stir until smooth and bubbly, then pour the mixture into the bottom of the prepared cake pan.
  3. Arrange the peach slices over the caramel mixture in a circular pattern, overlapping slightly. Set aside.
  4. In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  5. In a separate large bowl, beat together the granulated sugar and eggs until light and fluffy. Add the vanilla extract and mix well.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
  7. Pour the cake batter over the peach layer in the pan, spreading it out evenly with a spatula.
  8. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  9. Remove from the oven and let it cool for 10 minutes. Invert the cake onto a serving plate, carefully removing the pan. Allow it to cool slightly before serving.
