  • 2 cups flaked coconut (optional)

  • 8 oz cream cheese, softened
  • 14 oz can condensed milk
  • 16 oz Cool Whip
  • 1 jar caramel ice cream topping
  • 2 graham cracker crusts (store-bought)

Instructions

  • Prepare the Pecan-Coconut Mixture: In a skillet, lightly brown the chopped pecans and coconut (if using) in the butter. Stir frequently to prevent burning. Once the mixture is browned, set it aside to cool.
  • Make the Creamy Filling: Using an electric mixer, blend the softened cream cheese, condensed milk, and Cool Whip together until smooth and well combined.
  • Fill the Pie Crusts: Divide the creamy filling evenly between the two graham cracker crusts, spreading it out to cover the bottom of the crusts.
  • Add the Topping: Evenly distribute the pecan and coconut mixture over the top of each pie.
  • Drizzle with Caramel: Drizzle the entire jar of caramel ice cream topping over the pecan-coconut topping on both pies.
  • Chill the Pies: Refrigerate or freeze the pies for at least 3 to 4 hours. For the best results, freeze the pies, as they cut better when frozen.
  • Serve: Top with extra Cool Whip, if desired, and serve chilled or frozen.
