Make the French Toast Batter:
- In a shallow dish, whisk together the eggs, milk, vanilla extract, cinnamon, and a pinch of salt until fully combined.

Cook the French Toast:
- Heat a non-stick skillet or griddle over medium heat and melt a little butter in the pan.
- Dip each slice of bread into the egg mixture, coating both sides evenly, and then place the bread on the skillet. Cook for about 2-3 minutes on each side or until golden brown and cooked through. Repeat with all slices of bread. Set aside.

- In the same skillet, melt the butter over medium heat. Add the sliced bananas, brown sugar, cinnamon, and a pinch of salt. Stir gently to coat the bananas in the sugar mixture.
- Allow the bananas to cook for about 3-4 minutes, until they are softened and caramelized. If you’re using rum, carefully add it to the pan and cook for an additional 1 minute, letting it cook off. Remove from heat.
