  • Pinch of salt

For the Caramelized Bananas:

  • 2 ripe bananas, sliced
  • 2 tbsp butter
  • 2 tbsp brown sugar (packed)
  • 1/4 tsp ground cinnamon
  • Pinch of salt
  • 1 tbsp rum (optional, for extra flavor)

  • Powdered sugar (optional)
  • Whipped cream (optional)

Instructions

  1. Make the French Toast Batter:

    • In a shallow dish, whisk together the eggs, milk, vanilla extract, cinnamon, and a pinch of salt until fully combined.
  2. Cook the French Toast:

    • Heat a non-stick skillet or griddle over medium heat and melt a little butter in the pan.
    • Dip each slice of bread into the egg mixture, coating both sides evenly, and then place the bread on the skillet. Cook for about 2-3 minutes on each side or until golden brown and cooked through. Repeat with all slices of bread. Set aside.
  3. Caramelize the Bananas:

    • In the same skillet, melt the butter over medium heat. Add the sliced bananas, brown sugar, cinnamon, and a pinch of salt. Stir gently to coat the bananas in the sugar mixture.
    • Allow the bananas to cook for about 3-4 minutes, until they are softened and caramelized. If you’re using rum, carefully add it to the pan and cook for an additional 1 minute, letting it cook off. Remove from heat.
  4. Assemble the Dish:

    • Place a slice of French toast on each plate. Spoon the caramelized bananas over the top of each slice. Drizzle with maple syrup, dust with powdered sugar, or add a dollop of whipped cream if desired.
  5. Serve:

    • Serve immediately while the French toast is warm and the bananas are still caramelized and gooey.

Notes

  • You can use any type of bread, but thick, hearty slices like brioche or challah work best for French toast.
  • For a dairy-free version, use a non-dairy milk like almond or oat milk and dairy-free butter.
