- 12 large mushroom caps, cleaned and stems removed
- 1 tablespoon olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon fresh thyme leaves
- 1/4 cup white wine or vegetable broth
- 1/2 cup grated Gruyère cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
- Salt and pepper, to taste
- 1 tablespoon breadcrumbs (optional, for topping)
Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook, stirring occasionally, until the onions are soft and golden brown, about 15-20 minutes.
- Add the minced garlic and fresh thyme to the onions, and cook for another 1-2 minutes until fragrant.
- Pour in the white wine (or vegetable broth) and stir to deglaze the pan. Let the liquid cook off for 2-3 minutes. Season with salt and pepper to taste. Remove from heat and let the caramelized onion mixture cool slightly.
- Fill each mushroom cap with a generous spoonful of the caramelized onion mixture. Sprinkle the grated Gruyère cheese evenly over the top of each stuffed mushroom.
- If using breadcrumbs, sprinkle them over the cheese for a crispy topping.
- Arrange the stuffed mushrooms on the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.
- Remove from the oven and garnish with chopped fresh parsley before serving.

- For a different flavor, try adding crumbled bacon or sausage to the caramelized onions for extra richness.
