For the Tart:

  • 1 pie crust, preferably homemade (blind baked)
  • 4 large onions, sliced into ¼-inch rounds
  • 1 tablespoon sugar
  • ½ teaspoon kosher salt
  • 1½ tablespoons balsamic vinegar
  • 2 tablespoons fresh thyme, chopped (or 2 teaspoons dried thyme)
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup heavy cream
  • 1 cup Gruyere cheese, grated

Instructions

  • Blind Bake the Crust:
    Prepare and blind bake your pie crust according to your recipe or follow the instructions in Lea Ann Brown’s Pie Crust Article. Let it cool.
  • Caramelize the Onions:
    In a large frying pan, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions, sugar, and salt. Cook, stirring often, until the onions reduce to about two-thirds of their original volume (approximately 30 minutes). If the pan seems dry, add a tablespoon of butter. Stir in the balsamic vinegar and reduce the heat to low. Cook for another 15 minutes, stirring frequently, until the onions are golden brown and fully caramelized.
  • Add Flavor:
    Remove the pan from heat and stir in the thyme and black pepper. Allow the mixture to cool slightly, then stir in the heavy cream until fully combined.
  • Assemble the Tart:
    Preheat the oven to 350°F (175°C). Spread the caramelized onion mixture evenly into the blind-baked tart shell. Sprinkle the grated Gruyere cheese evenly over the top.
  • Bake:
    Bake the tart in the preheated oven for about 15 minutes, or until the filling is set and the cheese is melted.
  • Serve:
    Let the tart cool slightly before serving. Serve warm or at room temperature, garnished with a sprig of thyme if desired.

  • For best results, use a homemade or high-quality store-bought pie crust.
  • You can substitute Gruyere with another cheese like Swiss or cheddar if desired.
