Description
Embrace the rich flavors of Latin American cuisine with our Carne con Papas recipe. This hearty stew combines tender chunks of beef with the earthy comfort of potatoes, simmered in a tomato-based sauce with a blend of aromatic spices. Perfect for a family dinner or to warm up on a chilly day.
Ingredients
2 lbs beef chuck, cut into cubes
4 large potatoes, peeled and cubed
1 large onion, diced
4 cloves garlic, minced
1 bell pepper, diced
2 tomatoes, diced
3 tablespoons tomato paste
4 cups beef broth
1 teaspoon ground cumin
1 teaspoon dried oregano
2 bay leaves
Salt and pepper to taste
2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, and brown in batches. Set aside.
- In the same pot, add onion, garlic, and bell pepper, and sauté until softened.
- Stir in diced tomatoes and tomato paste; cook for 2 minutes.
- Return the beef to the pot, add beef broth, cumin, oregano, and bay leaves. Bring to a boil.
- Reduce heat to low, cover, and simmer for about 1 hour, or until the beef is tender.
- Add the cubed potatoes and continue to simmer until the potatoes are cooked through, about 20 minutes.
- Adjust seasoning with salt and pepper, remove bay leaves, and serve hot.
Notes
For a thicker stew, you can mash a few of the potatoes and stir them back into the stew before serving.
Carne con Papas is often served with rice or enjoyed with warm tortillas.
