Description

Ingredients

2 lbs beef chuck, cut into cubes

4 large potatoes, peeled and cubed

1 large onion, diced

4 cloves garlic, minced

1 bell pepper, diced

2 tomatoes, diced

3 tablespoons tomato paste

4 cups beef broth

1 teaspoon ground cumin

1 teaspoon dried oregano

2 bay leaves

Salt and pepper to taste

2 tablespoons olive oil


Instructions

  • Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, and brown in batches. Set aside.
  • In the same pot, add onion, garlic, and bell pepper, and sauté until softened.
  • Stir in diced tomatoes and tomato paste; cook for 2 minutes.
  • Return the beef to the pot, add beef broth, cumin, oregano, and bay leaves. Bring to a boil.
  • Reduce heat to low, cover, and simmer for about 1 hour, or until the beef is tender.
  • Add the cubed potatoes and continue to simmer until the potatoes are cooked through, about 20 minutes.
  • Adjust seasoning with salt and pepper, remove bay leaves, and serve hot.

Notes

For a thicker stew, you can mash a few of the potatoes and stir them back into the stew before serving.

Carne con Papas is often served with rice or enjoyed with warm tortillas.
