- 4–5 lbs beef short ribs
- 1 tbsp olive oil
- Salt and pepper, to taste
For the Carolina Mustard BBQ Sauce:
- 1 cup yellow mustard
- 1/2 cup apple cider vinegar
- 1/4 cup honey
- 2 tbsp brown sugar
- 2 tbsp Worcestershire sauce
- 1 tbsp ketchup
- 1 tsp hot sauce (optional)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper (optional)
- Salt and pepper, to taste
Instructions
- Sear the Ribs:
Turn the Instant Pot to “Sauté” mode and heat the olive oil. Season the beef short ribs generously with salt and pepper. Sear the short ribs in batches for 3-4 minutes on each side until browned. Remove the ribs and set aside. - Make the Carolina Mustard BBQ Sauce:
In a medium bowl, whisk together the mustard, apple cider vinegar, honey, brown sugar, Worcestershire sauce, ketchup, hot sauce (if using), garlic powder, onion powder, cayenne pepper, salt, and pepper. Stir until smooth and well combined. - Cook the Ribs in the Instant Pot:
Pour 1 cup of water into the Instant Pot. Place the trivet inside and arrange the seared short ribs on top of the trivet. Pour the Carolina Mustard BBQ sauce over the ribs, covering them evenly. - Pressure Cook:
Close the Instant Pot lid and set the valve to “Sealing.” Select “Manual” or “Pressure Cook” on high for 45 minutes. Once the cooking time is complete, let the pressure release naturally for 10-15 minutes, then carefully perform a quick release to release any remaining pressure. - Serve:
Remove the short ribs from the Instant Pot and serve with extra Carolina Mustard BBQ sauce on the side. You can also reduce the sauce by simmering it on “Sauté” mode for a few minutes if you prefer a thicker consistency.
Notes
- If you prefer a spicier BBQ sauce, you can add more cayenne pepper or your favorite hot sauce.
- Serve the ribs with classic BBQ sides like coleslaw, cornbread, or roasted vegetables for a complete meal.
- If you don’t have beef short ribs, you can substitute with beef brisket or chuck roast, but cooking times may vary.
