- 1 cup white sugar
- 1 cup light brown sugar

Instructions
- Preheat oven to 350°F (175°C) and grease and flour a 9×13 inch baking pan.
- In a large bowl, combine the grated carrots, flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk together the sugars, oil, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick comes out clean.
- Let the cake cool completely before frosting.
