Description

A moist and flavorful carrot cake loaf that combines grated carrots with warm spices, perfect for any occasion.


Ingredients

  • 2 cups grated carrots
  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup white sugar
  • 1 cup light brown sugar
  • 1/2 cup vegetable oil
  • 4 eggs
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 350°F (175°C) and grease and flour a 9×13 inch baking pan.
  • In a large bowl, combine the grated carrots, flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In a separate bowl, whisk together the sugars, oil, eggs, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick comes out clean.
  • Let the cake cool completely before frosting.

Notes

  • Can add nuts or dried fruits for variation.
