Description

This Carrot Soup is a comforting, velvety dish that’s perfect for chilly days. Made with simple ingredients like fresh carrots, onions, and a hint of seasoning, this soup is naturally sweet, healthy, and easy to make. A great option for a light lunch, dinner, or as an appetizer. It’s also easy to customize with different herbs and spices for extra flavor.

Ingredients

Scale
  • 1 tablespoon olive oil or butter

  • 1 medium onion, chopped

  • 4 cups carrots, peeled and sliced

  • 4 cups vegetable broth (or chicken broth)

  • 1 teaspoon ground ginger (optional for a hint of warmth)

  • 1/2 teaspoon ground cumin (optional for depth)

  • Salt and pepper to taste

  • 1/2 cup coconut milk or heavy cream (optional for creaminess)

  • 1 tablespoon fresh lemon juice (optional, for a bit of brightness)

  • Fresh herbs for garnish (like parsley, thyme, or cilantro – optional)

Instructions

  1. Sauté the Onions:

    • In a large pot, heat the olive oil or butter over medium heat.

    • Add the chopped onion and cook, stirring occasionally, for about 5 minutes until softened and slightly golden.

  2. Cook the Carrots:

    • Add the sliced carrots to the pot and stir to combine with the onions.

    • Cook for another 2-3 minutes.

  3. Add the Broth and Spices:

    • Pour in the vegetable or chicken broth, making sure the carrots are covered by the liquid.

    • Add ground ginger, cumin, salt, and pepper to taste.

    • Bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the carrots are soft and easily pierced with a fork.

  4. Blend the Soup:

    • Once the carrots are tender, remove the soup from the heat.

    • Use an immersion blender to purée the soup until smooth and creamy. If you don’t have an immersion blender, you can carefully transfer the soup in batches to a regular blender and blend until smooth.

  5. Add Creaminess (Optional):

    • For a creamier texture, add coconut milk or heavy cream to the blended soup and stir to combine.

    • Taste and adjust seasoning if needed, adding more salt, pepper, or spices.

  6. Serve:

    • Ladle the soup into bowls, garnish with fresh herbs if desired, and drizzle with a bit of fresh lemon juice for added brightness.

  7. Enjoy:

    • Serve warm and enjoy the comforting flavors of this homemade Carrot Soup!

Notes

  • You can add more spices like turmeric, coriander, or cinnamon for a different flavor profile.

  • If you prefer a thicker soup, use less broth or add a small potato while cooking the carrots to give it more body.

  • For a vegan version, use coconut milk or almond milk as the creamy base.

  • This soup stores well in the fridge for 3-4 days and can also be frozen for up to 3 months.
