Ingredients

Scale

For the Chicken Filling:

  • 2 large chicken breasts (boneless, skinless, cooked and shredded)
  • 1/2 cup mayonnaise
  • 1/4 cup Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme or rosemary
  • Salt and pepper, to taste
  • 1/4 cup grated cheddar cheese (optional, for extra flavor)

For the Dough (Casino Buns):

  • 2 cups all-purpose flour
  • 2 tsp active dry yeast
  • 1/2 cup warm water
  • 2 tbsp olive oil
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1/4 tsp garlic powder (optional for flavor)

For Assembling the Buns:

  • 1 egg (for egg wash)
  • 1 tbsp sesame seeds (optional, for topping)
  • Fresh parsley or chives (chopped, for garnish)

Instructions

  1. Prepare the Chicken Filling:
In a large bowl, combine the shredded chicken with mayonnaise, Dijon mustard, garlic powder, onion powder, thyme (or rosemary), salt, and pepper. Stir until all ingredients are well mixed. Add grated cheddar cheese if using, and set aside.
  2. Make the Dough for the Casino Buns:
In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for 5-10 minutes until frothy.
In a large bowl, combine the flour, salt, and garlic powder (if using). Add the yeast mixture and olive oil, and mix until a dough begins to form. Knead for about 5-7 minutes until smooth and elastic. If the dough is sticky, add a little more flour, one tablespoon at a time.
  3. Let the Dough Rise:
Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  4. Preheat the Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  5. Assemble the Casino Buns:
Once the dough has risen, punch it down and divide it into 8-10 equal portions.
Roll each portion into a ball, then flatten each ball slightly with your hands or a rolling pin.
Place a spoonful of the prepared chicken mixture in the center of each dough circle. Fold the edges over the filling and pinch them together to seal, forming a bun shape.
Place the filled buns seam-side down on the prepared baking sheet.
  6. Prepare for Baking:
Beat the egg and brush it over the tops of the buns to give them a golden, shiny finish. Sprinkle sesame seeds on top if desired.
  7. Bake the Buns:
Bake in the preheated oven for 20-25 minutes, or until the buns are golden brown on top and cooked through. The internal temperature of the chicken filling should reach 165°F (74°C).
  8. Serve:
Once baked, remove the buns from the oven and let them cool slightly. Garnish with freshly chopped parsley or chives. Serve warm.

Notes

  • You can add vegetables like diced bell peppers or onions to the chicken filling for more flavor and texture.
  • If you prefer, you can use store-bought bread dough instead of making your own.
  • For a lighter version, you can use Greek yogurt instead of mayonnaise in the filling.
  • These buns can be made ahead of time and stored in an airtight container for up to 2 days or frozen for longer storage.
