- 1 small head of cauliflower, cut into small florets (about 3 cups)
- 1 tablespoon olive oil

- 1 clove garlic, minced
- 1/2 teaspoon dried thyme or oregano
- 1/2 cup grated sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup sour cream or plain Greek yogurt
- 4 slices of crusty bread (like sourdough or ciabatta)
- Chopped parsley or chives, for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss cauliflower florets with olive oil, salt, pepper, and dried herbs. Spread on the baking sheet and roast for 20-25 minutes until golden and tender. Let cool slightly.
- In a mixing bowl, combine the roasted cauliflower, garlic, cheddar cheese, Parmesan, and sour cream or Greek yogurt. Mash slightly with a fork to blend and soften the mixture, but leave some texture.
- Lightly toast the bread slices, then place them on a baking tray.
- Spoon the cauliflower mixture evenly over each slice of bread.
- Return to the oven and bake at 375°F (190°C) for 8–10 minutes, or until the cheese is melted and bubbly. Broil for 1-2 minutes at the end for extra browning, if desired.
- Garnish with chopped herbs and serve warm.
